Did you know there are two types of flax seeds? Brown and golden. I did not know this but I do now. Although the color and price differ, the nutritional benefits are the same. Most people prefer the golden flax seed because of it's nutty-buttery flavor.
Most stores sell flax seed in three different forms:
1. Whole flax seeds- You'll find golden and brown flax seeds in bulk bins or pre-packaged. This is the most economical way to purchase flax seeds. These will store well for a long time because the seed is in tact. But to get the benefits of flax seed, it must be ground before use. You can grid the seeds in a food processor, coffee grinder, or blender. I personally use my magic bullet to grind mine. Once ground, it must be stored in an air-tight container in the refrigerator or freezer. You can add whole flax seeds to almost any food, even when baking.
2. Ground flax seed. Also called "flax seed meal," you'll find pre-packaged golden and brown varieties on the grocery shelf or refrigerated section, but not in bulk form. Ground flax seed is slightly more expensive than whole flax seed.
3. Flax seed oil. You'll find flax oil in opaque bottles in the refrigerated section or in capsules. Both flax seed oil in a bottle and flax seed oil capsules are considered to be "supplements," and not "foods." Flax seed oil and capsules are the most expensive way to purchase flax seed. You can add flax seed oil to many foods but you cannot heat it or cook with it. My husband switched from using oil to ground flax seeds after learning that you lose many benefits using the oil over the flax seeds. The advantage of eating flax seed over flax oil is that flax seed is a complete food providing you with the benefits of Omega3, 6, & 9 EFA's, fiber, protein, plant lignans, vitamins, minerals, and amino acids. Flax oil, expelled from the flax seed, contains the EFA's but not the fiber, protein, and plant lignans (an anti-cancer agent.)
